Rapid hardening is usually carried out in a hardening room or spiral freezer, where very low temperatures help freeze the product quickly and minimize the formation of large ice crystals. Proper temperature control at this stage is essential for maintaining the desired texture and consistency of ice cream.
Once hardened, ice cream is transferred to a frozen cold storage room for long-term storage and distribution. Maintaining stable storage temperatures helps protect the product from temperature fluctuations and quality loss.
